Sometimes, life calls for cheese. Lots of cheese. Golden, bubbly, cheese and garlic and bread. That's what this dip is all about. It's one of the best excuses ever to eat cheese. I took this dip to my church's small group and it vanished in a very short time. Everyone loved it, and the other day, my best friend asked me to make her this dip for lunch! (I didn't, because I care about her arteries and overall health.) Make sure you have other people around once this dip comes out of the oven. It is simply irresistible! :)
No, I have not forgotten I have a blog. The culprit that's to blame for my prolonged absence is COLLEGE. That fiend has kept me away for far too long, but I finally decided to take a short break from all the hustle to share this awesome recipe with you. I ate this awesome chicken meal for about four days in a row over brown rice, and I really didn't mind at all. The Tabasco sauce really gave it awesome flavor, with practically no spiciness, believe it or not (although I wouldn't mind if it did!). And I've never been a fan of chickpeas, but in that pot they absorb all of the other flavors and transform into little bits of wonder. It is also a pretty healthy dish and fairly simple to make. I agree with Sweet Brown. On to the recipe!
So I ate this for breakfast from Monday to Friday for two weeks straight!!! And I'm not sick of it. I'm actually craving some right now... Kitchen time!
I recently discovered overnight oats and I love the concept. Basically you mix together equal parts of oats and milk, add whatever you want to it, stick it in the fridge overnight and eat in the morning. This is why it's such a perfect university-student breakfast. No fuss, little clean up, FREAKIN' DELICIOUS. It's such a comforting, creamy and rich breakfast. Some people have asked me if it isn't weird to eat cold oatmeal. It's not weirder than my roommate drinking water out of a measuring cup. But she enjoys it, and so will you enjoy this oatmeal... probably. LOL I can compare it to the feeling of eating cold cereal, but better. Besides, who can resist chocolate chips in the morning? Those who know me well are aware of the fact that one of my favorite "food genres" is Tex-Mex. When I'm browsing through recipes in Pinterest and I see a combination of black beans, corn, peppers, onions and cheese, I usually cannot resist pinning the recipe. Those are some of my favorite ingredients and these taquitos have them all and more. Why should you make them? Here's four reasons:
I don't know about you, but in the morning my sweet tooth comes alive! I usually crave breakfasts that could easily fall under the dessert category, which is why I adore pancakes! Ever since I discovered the wonders of making pancakes from scratch I've never been tempted to go back to that box of Aunt Jemima. However, I made regular pancakes and added blueberries or chocolate chips to them and that was about it. Mom was the one that came up with this recipe for moist and fluffy healthier whole wheat pumpkin pancakes (I could definitely add more words to their description, but I'll leave it at that!)
As for the syrup... No matter how much I loved homemade pancakes I could never fathom giving up my precious plastic bottle of Aunt Jemima Butter Lite! All that high fructose corn syrup, cellulose gum, artificial flavoring and food coloring had captivated my taste buds ever since I could remember. But when I found the recipe for this buttery syrup, it became my family's favorite! I no longer need the fake stuff. In my opinion, real ingredients is always the way to go. ;) So here's how it's done... Confession time. When I was making this smoothie, I was scared. I had no idea how it was gonna turn out and the sight of all that spinach inside the blender made my stomach do summersaults. When I finished concocting this otherworldly beverage I dipped my finger in the cool green liquid to taste it, with the same reluctance Squidward had when he tasted a Krabby Patty for the first time. Also like Squidward, once I tasted it I couldn't get enough. It was the first smoothie I tasted that I truly liked! You see, I'm not really a smoothie person, but my mom is always making these healthy fruit smoothies in the morning and I got jealous. I wanted to create a healthy smoothie that I could enjoy too and came up with this home run. If you've never had the guts to taste a green smoothie (and you like peanut butter) this is the one for you! It has just the right amount of sweetness, I could detect no spinach flavor whatsoever, it's whimsical-looking and it is packed with healthy stuff! I absolutely love it! And unlike Squidward, if you drink a lot of it, I promise you won't end up like this... Haha! Enough with the Spongebob references... On to the recipe! :)
The title of this recipe is probably getting two different reactions right now from my wonderful readers... Don't worry, Non-Puerto Rican readers, that's how I would say it in English as well. ;)
Oh the wonders of cheese. Cheddar, parmesan, mozzarella, swiss, cream cheese, gouda, muenster... I love 'em all! This pizza has FOUR types of cheese, each playing an important role. The parmesan and cream cheese make the alfredo sauce super creamy. The goat cheese adds that incomparably awesome salty bite and the mozzarella binds all of it together, both texture and flavor-wise. Plus, the alfredo sauce recipe makes for a lighter version than the typical alfredo, so I think this pizza is a great transition between all those calorie-laden meals we had during the holidays and all the healthy foods we'll be eating from now on...
Ok, this exquisite pizza doesn't need much justification, so that ridiculous argument works fine! :D On to the recipe! Happy New Year everyone!!! Although the Christmas season may be over in the U.S., this simply ain't so in Puerto Rico. There's still Three Kings' Day or El Día de los Reyes in January 6th! And what better way to celebrate than with this deliciously simple cake? Even if you don't celebrate Three Kings' Day, this moist and tasty cake is perfect for any special occasion, or just for sticking in the fridge and eating a piece a day for a week. I'm not helping with those New Year resolutions, right? :D Don't worry. Healthier recipes will be coming soon. But for now, I hope you enjoy this delightful dessert.
Howdy there! I know, I know... It's been so sooo SOOOO long since I post a recipe. Thank my finals for that! They were INTENSE. But then again, so is this cake. And contrary to my academic plight, this Snickers Cake is delightful! It generated similar reactions to my pumpkin cake-- reactions that a chocolate box cake mix could never ever dream to produce! This cake is the biggest cake I've ever made and it is also the most complicated. But never fear! Just take it one step at a time (caramel, cake, filling, frosting, assembly and ganache) and at the end it will be worth it. This is not a last-minute cake though. It will take from morning to late afternoon to make. Also, seeing as the ingredient list is quite long, I suggest getting a few of your friends to pitch in and even help if you want. Look at that beautiful anatomy! Accept the challenge? ;)
